Jiangsu and Zhejiang.

东坡肉 is pork belly simmered so long in wine and soy that a chopstick parts it — the collagen between its layers has turned into gelatin.

The Yangtze delta is called 鱼米之乡, the land of fish and rice: lakes and canals full of fish, shrimp and hairy crabs, rich paddy fields, Shaoxing's wine and Zhenjiang's vinegar, and cities — Yangzhou, Suzhou, Hangzhou, Shanghai — wealthy enough to refine their cooking. Huaiyang (淮扬) cooking from Yangzhou is famous for knife work: 文思豆腐, a block of soft tofu cut into threads fine enough to float like hair in soup, and 狮子头, "lion's head" meatballs of hand-chopped pork so tender they are eaten with a spoon. Hangzhou's 西湖醋鱼 poaches a grass carp and dresses it with a sweet-and-sour vinegar sauce; Suzhou's 松鼠鳜鱼 is a mandarin fish cut, fried and shaped like a squirrel.

The signature technique is 红烧, "red-braising" (XVI.5): pork belly or fish browned, then simmered gently in Shaoxing wine, soy and rock sugar (冰糖) until tender, and finally reduced over high heat until the sauce coats it in a dark, sticky glaze (XXVII.2). Shanghai's 本帮 style is sweeter and darker still (浓油赤酱). 东坡肉 of Hangzhou, named for the Song poet 苏东坡, braises thick squares of belly for hours. Their tenderness is chemistry: collagen in the connective tissue between fat and lean shrinks and toughens near 60 °C, but given time near the boil it unwinds into soluble gelatin (VI.6). The workshop braises pork.

Below: the share of the collagen in pork belly converted to gelatin over the braising time you choose, at the temperature you choose and at a full simmer near 100 °C (the course reaction bench, gelatin kinetics), with the texture it gives.

What you will learn
Workshop
Reaction bench: the course's first-order collagen-to-gelatin conversion with Arrhenius temperature dependence (calibrated to braising practice and DSC data). Texture bands (teaching): under 40 % chewy, 40–80 % tender, above 80 % melting. Real belly varies with the pig and the cut.

Time near the boil, then reduce

In the course model, belly braised at 95 °C has converted about 0.55 of its collagen after an hour, 0.80 after two and 0.91 after three — tender 红烧肉 at about an hour and a half, melting 东坡肉 after two or three. At only 85 °C two hours reach just 0.59: a braise that barely trembles is slower, which is why the pot is kept at a lazy simmer, covered, not merely warm. Fat and lean stay moist because the gelatin and the fat lubricate the fibres, even though the muscle itself has long since passed its juicy range (XVIII.3).

红烧肉 for 4: cut 600 g skin-on pork belly into 3 cm cubes; blanch 3 minutes and rinse. Melt 30 g rock sugar in 1 tbsp oil over gentle heat until amber (VIII.4); add the pork and turn to coat; add 3 slices ginger, 2 scallions, 1 star anise, 60 mL Shaoxing wine, 2 tbsp light soy, 1 tbsp dark soy and hot water just to cover. Simmer covered over 文火 for 75–90 minutes. Uncover, remove the aromatics, and boil over 旺火, turning the pork, until the sauce is reduced to a glossy coating — watch it closely at the end, as sugar burns fast. Serve with rice and a plain green vegetable.

At the stove

Braise two batches of pork belly cubes for 45 and 90 minutes. Compare how a chopstick enters each.

The 开国第一宴, the state banquet of 1 October 1949, was cooked by Huaiyang chefs, chosen because their mild cooking suited guests from every region; 狮子头 and 软兜长鱼 were on the menu.

Terms

红烧
Red-braising: browned, simmered in soy, wine and sugar, reduced to a glaze.
浓油赤酱
Rich oil, red sauce: the Shanghai 本帮 style.
文思豆腐
Tofu cut into hair-fine threads: Huaiyang knife work.
收汁
Reducing the sauce over high heat at the end.
The Yangtze delta cooks fish, crab and pork with soy, Shaoxing wine, sugar and vinegar, and fine knife work. 红烧: brown, simmer near the boil until collagen becomes gelatin (about 1½–3 hours), then reduce to a glaze.
